There’s just something about French toast: the crunchy granola garnish, cinnamon's spicy depth and the cool sweetness of berries on top. Why wait until the weekend?
Combine strawberries, bananas, orange juice, brown sugar, butter and vanilla, strawberries, and banana in a saucepan over medium heat. Simmer 5-6 minutes, or until flavors have combined, stirring occasionally.
In a shallow bowl, whisk egg, milk, and cinnamon.
Heat griddle or skillet over medium heat.
Dip bread into the milk mixture, one at a time, and place in heated pan. Cook 2 minutes per side, or until golden brown.
Serve with strawberry-banana sauce and top with a sprinkle of granola for garnish.
