This delicious sandwich is everything you love about chicken Caesar salad (flavorful Parmesan cheese, crisp lettuce and juicy grilled chicken) in between two slices of Martin’s Potato Bread.
1 1/2poundsboneless, skinless chicken breastssliced into strips
4tablespoonsbuttermelted
1teaspoongarlic powder
1teaspoonItalian seasoning
8slicesMartin's Potato Bread
Green leaf lettuce
2avocadossliced
1/2cupCaesar dressing
1/3cupgrated Parmesan cheese
Instructions
Preheat oven to 400°F.
Whisk together 3 Tbsp. olive oil, parsley, lemon juice and thyme in large bowl. Add chicken and toss to coat. Cover and refrigerate at least 30 minutes.
Heat 1 Tbsp. olive oil in medium skillet over medium-high heat. Add chicken and cook 7-8 minutes, or until cooked through. Remove and let rest 5 minutes.
Mix melted butter, garlic powder and Italian seasoning in a small bowl. Brush over both sides of each slice of bread. Arrange slices on a large baking sheet and bake 5 minutes, or until golden brown.
To assemble sandwich, layer lettuce on top of a slice of toasted bread, then add chicken, avocado and drizzle with dressing. Sprinkle with cheese and add another layer of lettuce before topping with a slice of bread.
