Savory Grilled Vegan Delight Sandwich

  • 2 slices Arnold Oatnut Bread
  • 1/2 Avocado mashed
  • 1/2 cup Cashews soaked overnight, drained, and blended into a fine paste
  • 4 thick slices Zucchini grilled
  • 4 thick slices Portobello mushroom cap grilled
  • 2 slices Beefsteak tomato
  • 1 half Roasted red pepper
  • 1 small handful Spinach
  • Salt and pepper to taste


  • Take 2 slices of bread. On one side of one slice, spread your mashed avocado.
  • On one side of second slice, spread your blended cashew paste.
  • Place both slices of bread (topping side up) on a heated grill.
  • On slice with cashew paste, layer grilled mushrooms, zucchini, red pepper, tomatoes, and top with spinach. Place avocado bread on top of sandwich (avocado side facing in).
  • Turn sandwich until fully heated and golden brown on both sides. Enjoy this nutrient rich, savory, creamy, crunchy, flavorful, toasty sandwich creation!
