  • 3 medium plum tomatoeschopped
  • cup ¼cilantrochopped
  • cup ¼red oniondiced
  • 2tablespoons fresh lime juice
  • 1tablespoon hot sauce
  • 12 corn tortilla tostadashard tortilla shells
  • 1cups ½fresh black beans or 1 can black beansdrained and rinsed, 15 oz.
  • 1cups ½queso fresco or goat cheesecrumbled
  • 6leaves iceberg or Romaineof lettuceshredded
  1. In a medium bowl, stir together tomatoes, cilantro, onion, lime juice and hot sauce. Set aside.
  2. To assemble, place each tostada on a plate. Distribute the beans, cheese, lettuce and salsa evenly over the tortillas.
