Ingredients

  • 4 oz Grilled salmon fillet flaked with fork into chunks
  • 2 tbsp fat free mayonnaise
  • cup ¼Finely diced red bell pepper
  • 2 tbsp Italian parsley chopped
  • 1 tbsp Finely diced onion
  • 1 tbsp Fresh lemon juice
  • 1 tsp Fresh lemon zest
  • 1/8 tsp salt
  • 1/8 tsp ground black pepper
  • 4 slices Roman Meal bread toasted
  • 4 Lettuce leaves

Instructions

  • Combine salmon, mayonnaise, bell pepper, parsley, onion, lemon juice, lemon zest, salt and pepper in small bowl.
  • Layer lettuce leaves and salmon salad evenly between slices of bread, creating 2 sandwiches.
