Asian Vegetables Rice Bowl
This recipe puts fresh veggies in their element, sautéeing them in a spicy hoisin peanut sauce. Use your imagination or whatever vegetables you have in the fridge!

  • 1cup brown riceuncooked
  • 1tablespoon vegetable oil
  • 1 small onioncut into thin strips
  • cup ¼red bell peppersdiced
  • 2cups broccoli floweretscut into small pieces
  • 1cup sugar snap peas
  • ¼cup BBQ sauce
  • 2tablespoons hoisin sauce
  • 1tablespoon peanut butter
  • Dash dried red pepper flakes
  1. Prepare brown rice according to package directions.
  2. In the meantime, in a large skillet, heat oil and cook onions, bell peppers, broccoli and snap peas for 3 to 5 minutes or until crisp-tender.
  3. Stir in BBQ sauce, hoisin sauce and peanut butter; mix until well blended and hot.
  4. Fold in prepared rice and serve.
