Grilled Gruyere and Roasted Vegetable Sandwich
Roasted summer vegetables and Gruyere cheese team up for a grown-up grilled cheese with a whole lot of flavor.
Prep Time: 30 minutes

Ingredients
- 1 small zucchini sliced lengthwise into 1/4-inch strips
- 1/2 small red bell pepper sliced into 1/4-inch strips
- 1/2 small onion thinly sliced
- 2 tablespoons Italian salad dressing
- 2 ounces Gruyere cheese thinly sliced
- 4 slices whole wheat bread
Instructions
- Preheat oven to 400°F. Line baking sheet with aluminum foil.
- Add zucchini, peppers and onion to prepared baking sheet. Drizzle with Italian dressing and toss lightly
- Bake 10-12 minutes, or until tender. Remove from oven.
- Layer cheese and roasted vegetables between slices of bread, creating 2 sandwiches.
- Spray medium skillet with nonstick cooking spray and heat over medium heat. Cook sandwiches 2-3 minutes per side, or until golden brown and cheese is melted.
