Grilled Gruyere and Roasted Vegetable Sandwich

Roasted summer vegetables and Gruyere cheese team up for a grown-up grilled cheese with a whole lot of flavor.

Grilled Gruyere and Roasted Vegetable Sandwich

Ingredients

  • 1 small zucchini sliced lengthwise into 1/4-inch strips
  • 1/2 small red bell pepper sliced into 1/4-inch strips
  • 1/2 small onion thinly sliced
  • 2 tablespoons Italian salad dressing
  • 2 ounces Gruyere cheese thinly sliced
  • 4 slices whole wheat bread

Instructions

  • Preheat oven to 400°F. Line baking sheet with aluminum foil.
  • Add zucchini, peppers and onion to prepared baking sheet. Drizzle with Italian dressing and toss lightly
  • Bake 10-12 minutes, or until tender. Remove from oven.
  • Layer cheese and roasted vegetables between slices of bread, creating 2 sandwiches.
  • Spray medium skillet with nonstick cooking spray and heat over medium heat. Cook sandwiches 2-3 minutes per side, or until golden brown and cheese is melted.
