Greek Veggie Sandwich
A Greek-style vegetarian sandwich for adelicious Mediterranean meal!
- 1 cup frozen chopped kale or spinach (thawed and drained)
- 1 Tbsp prepared pesto
- 1 cup grape tomatoes halved
- 4 Tbsp Greek salad dressing
- 2 Tbsp crumbled feta cheese
- 2 pita halves (or flatbread or naan)
- Mix kale with pesto; add in grape tomatoes and cheese.
- Stuff pita halves with mixture and drizzle with Greek dressing.
