Shelley Case, RD Joins to Provide Celiac and Gluten-free Expertise

RIDGWAY, CO (November 29, 2010) — Shelley Case, RD has joined the Grain Foods Foundation’s scientific advisory board, a group of leading nutrition and medical experts who oversee the scientific accuracy of the Foundation’s programs and promotions. Case is a registered dietitian specializing in celiac disease and the gluten-free diet. She also is author of “Gluten-Free Diet: A Comprehensive Resource Guide” and the founder of Case Nutrition Consulting, Inc.

“Given the growing interest in gluten-free diets among consumers, Shelley will play an integral in helping us navigate and address this issue,” said Judi Adams, MS, RD and president of the Grain Foods Foundation. “She brings a wealth of expertise that will benefit our organization and our industry.”

Case recently participated in the Grain Foods Foundation’s nutrition panel, “Grains Nutrition Q & A: Separating Fact from Fiction” at this year’s International Baking Industry Exposition. During the panel, she offered insight on when a gluten-free diet is medically necessary and discussed the dangers of following a gluten-free diet without medical necessity or supervision.

“It’s important consumers understand that the gluten-free diet is a specific medical treatment for celiac disease and that jumping on the gluten-free bandwagon for a weight loss diet does not make sense,” explained Case. “It’s ironic because many gluten-free products are actually higher in total calories, fat, and sugar and lower in iron, B vitamins, and fiber.”

Case is a member of the Medical Advisory Boards of the Celiac Disease Foundation and Gluten Intolerance Group in the United States, and the Professional Advisory Board of the Canadian Celiac Association.

She joins seven other scientific advisory board members who each provide experience in a variety of fields ranging from cardiology and gastroenterology to obstetrics and pediatrics. Current advisory board members include: Glenn Gasser, PhD, Professor and Director, Exercise and Wellness Program and Director, Healthy Lifestyles Research Center at Arizona State University; James Gavin III, MD, PhD, former president of the American Diabetes Association and executive vice president & CEO of Healing Our Village; Julie Miller Jones, PhD, LN, CNS, Professor Emeritus at St. Catherine University; Ronald Kleinman, MD, Chief, Pediatric Gastroenterology and Nutrition at Massachusetts General Hospital; Sylvia Melendez-Klinger, MS, RD, LD, Founder of Hispanic Food Communications; Robert Rosenson, MD, Director of Lipoprotein Disorders and Clinical Atherosclerosis Research Professor at University of Michigan School of Medicine; and Bruce Young, MD, Silverman Professor of Obstetrics and Gynecology at NYU Medical Center.
